Types and Quality
Gum Arabic can be classified into the 2 different species where it comes from:
• Senegal Kordofan (Hashab, Verek)
• Seyal Talha

Taste
Gum Arabic has an off taste. The taste of flavoring products co-spraydried with Gum Arabic is not affected or dulled by Gum Arabic as carrier.
Dietary Fiber
Gum Arabic can be regarded as 95% “soluble fiber”.
Caloric value
Officially recognized as being under 1 Kcal per gram even if FAO/WHO’s recent research points to values of 3-4 Kcal per gram.
Cholesterol reducer
Human dietary intake studies have indicated a reduction in blood cholesterol levels when above average amount of Gum Arabic (25 grams per day) are ingested in solution.
Applications
Confectionery
As texturizer, barrier and film-building agent, coating agent, fat and sugar separating agent in almonds, jellies and chewing-gum. As well as an agent to prevent sugar crystallization.
Beverages
As emulsifier, stabilizer, suspending agent in flavors and soft drinks, clarified or cloudy juices basis.
Oenology
As stabilizer and clearing agent in wine, emulsifier and foam stabilizer in beer.
Dairy products and sauces
As emulsifier, binder, stabilizer, suspending agent for dairies, desserts, dressings, dips, sauces.
Bakery products
As improving freezing properties.
High Fiber Formulations
As part of the natural nutritional supplements that helps to add soluble fiber in palatable form, Gum Arabic is also used in concentrations as high as 50% in certain preparations.
Diabetic and dietetic food
As fiber enrichment, for reduction of the nutritional value, for prebiotic properties.
Pharma and cosmetics
